Let’s make it
Heat the oven to 220°C / 425°F. Toss tomatoes, garlic, oil, salt, and pepper in a roasting dish. Roast for 18–20 minutes until the tomatoes collapse and their edges brown.
Meanwhile bring a large saucepan of water to a boil. Cook rigatoni according to the package instructions. Reserve 200 ml of pasta water before draining.
Gently crush half the roasted tomatoes with a fork. Add drained pasta and 100 ml of reserved water to the roasting dish and toss carefully. Add more water a spoonful at a time until glossy.
Fold in basil and half the cheese. Divide among four bowls and finish with the remaining cheese.

A little kitchen wisdom
- Use a vegetarian-labelled Parmesan-style cheese made without animal rennet.
- Omit cheese for a dairy-free variation; the recipe as written contains milk.
- Do not discard the pasta water until the sauce is the texture you like.
Saving some for later
Refrigerate in a shallow, covered container within 2 hours (within 1 hour above 32°C / 90°F). Keep at 4°C / 40°F or below and use within 3 days. Reheat cooked leftovers to 74°C / 165°F, adding a splash of water if needed.
