Let’s make it
Cook noodles according to their package instructions. Drain, reserving 100 ml of cooking water.
Mix soy sauce, vinegar, maple syrup, and sesame oil in a small bowl.
Heat neutral oil in a large skillet over medium-high heat. Cook carrot, pepper, and cabbage for 4–5 minutes, stirring often.
Add garlic and ginger and stir for 30 seconds. Add noodles, sauce, and 2 tablespoons of reserved water. Toss for 1–2 minutes until hot, adding water if needed. Scatter with sesame seeds.

- Soy sauce and wheat noodles contain gluten; a gluten-free version needs both suitable noodles and gluten-free tamari.
- Thin, evenly sized vegetables cook quickly.
Saving some for later
Refrigerate in a shallow, covered container within 2 hours (within 1 hour above 32°C / 90°F). Keep at 4°C / 40°F or below and use within 3 days. Reheat cooked leftovers to 74°C / 165°F, adding a splash of water if needed.
