Let’s make it
Heat the oven to 220°C / 425°F. Spread tomatoes, peppers, onion, and garlic over a large tray. Toss with oil and salt.
Roast for 25–30 minutes until tender and lightly browned at the edges.
Transfer vegetables and tray juices to a saucepan. Add broth and simmer for 5 minutes.
Take off the heat. Blend with an immersion blender until smooth, then stir in chopped basil and pepper. Adjust thickness with water and warm through if needed.

- Use ripe tomatoes; watery ones give a milder soup.
- For a smoother finish, remove loose pepper skins after roasting.
- Bread or grilled cheese is an optional accompaniment and adds allergens.
Saving some for later
Refrigerate in a shallow, covered container within 2 hours (within 1 hour above 32°C / 90°F). Keep at 4°C / 40°F or below and use within 3 days. Reheat cooked leftovers to 74°C / 165°F, adding a splash of water if needed. Bring soup to a rolling boil when reheating.
