Let’s make it
Warm the oil in a large saucepan. Cook onion over medium heat for 5 minutes.
Add mushrooms and cook for 8 minutes, stirring, until they soften and released moisture mostly evaporates. Add garlic and thyme; cook for 30 seconds.
Add beans and broth. Simmer for 10 minutes.
Take the pan off the heat. Use an immersion blender to blend about half the soup, leaving some mushrooms and beans intact. Season with salt and pepper and heat through.
What you’ll need

A little kitchen wisdom
- Use a mix of button and chestnut mushrooms for varied texture.
- Keep the blender head submerged to reduce splashes.
- Use vegetable broth without milk or gluten ingredients.
Saving some for later
Refrigerate in a shallow, covered container within 2 hours (within 1 hour above 32°C / 90°F). Keep at 4°C / 40°F or below and use within 3 days. Reheat cooked leftovers to 74°C / 165°F, adding a splash of water if needed. Bring the soup to a rolling boil when reheating.
