Let’s make it
Heat the oil in a large saucepan over medium heat. Cook onion and carrots for 5 minutes.
Add garlic and cumin; stir for 30 seconds. Add lentils and broth.
Bring to a boil, reduce to a gentle simmer, and cook partly covered for 20 minutes, until lentils and carrots are tender. Stir occasionally.
Blend a portion with an immersion blender if you prefer a smoother soup. Stir in lemon juice and salt, and top with parsley.

A little kitchen wisdom
- Only use split red lentils; whole green lentils cook differently.
- Check broth labels for gluten and allergens.
- Add water when reheating because lentils continue to thicken.
Saving some for later
Refrigerate in a shallow, covered container within 2 hours (within 1 hour above 32°C / 90°F). Keep at 4°C / 40°F or below and use within 3 days. Reheat cooked leftovers to 74°C / 165°F, adding a splash of water if needed. Bring soup to a rolling boil when reheating.
