Let’s make it
Put the oats, milk, water, apple, cinnamon, and salt in a small saucepan.
Bring to a gentle simmer over medium heat, then lower the heat. Cook for 8–10 minutes, stirring often, until the oats are creamy and the apple is tender.
Stir in the maple syrup. Add a little water if the oats are thicker than you like.
Divide between two bowls and scatter over the pumpkin seeds.

- For a dairy-free version, replace the milk with an unsweetened plant drink; the recipe as written contains milk.
- Use oats explicitly labelled gluten-free and check your other ingredient labels.
Saving some for later
Refrigerate in a shallow, covered container within 2 hours (within 1 hour above 32°C / 90°F). Keep at 4°C / 40°F or below and use within 3 days. Reheat cooked leftovers to 74°C / 165°F, adding a splash of water if needed.
