Let’s make it
Heat oil in a deep lidded skillet. Cook the onion and pepper over medium heat for 5 minutes. Add garlic, paprika, and cumin and cook for 30 seconds.
Stir in rice, tomatoes, broth, and salt. Bring to a simmer, cover, and cook over low heat for 15 minutes.
Quickly stir in beans and sweetcorn, replace the lid, and cook for 5 minutes more, until the rice is tender and liquid absorbed. Add a little water if needed.
Remove from heat and rest, covered, for 5 minutes. Fluff with a fork and serve.

- Use white rice; brown rice needs different liquid amounts and a longer cooking time.
- A squeeze of lime is a bright optional finish.
- Select broth labelled gluten-free.
Saving some for later
Cool leftovers quickly in shallow containers, ideally refrigerating the rice within 1 hour. Keep at 4°C / 40°F or below and use within 24 hours. Reheat once only, until steaming throughout and at least 74°C / 165°F. Do not leave cooked rice at room temperature.
