Let’s make it
Heat oven to 220°C / 425°F. Toss broccoli with oil and salt on a lined tray. Roast for 8 minutes.
Mix mustard, maple syrup, lemon juice, and pepper in a small bowl.
Move broccoli to the sides and add salmon. Spoon the glaze over the fish, keeping utensils used with raw fish separate.
Roast for another 10–12 minutes, or until the thickest part of the salmon reaches 63°C / 145°F. Serve promptly with the broccoli.

- The glaze also works with trout, cooked to the same safe temperature.
Saving some for later
Refrigerate in a shallow, covered container within 2 hours (within 1 hour above 32°C / 90°F). Keep at 4°C / 40°F or below and use within 3 days. Reheat cooked leftovers to 74°C / 165°F, adding a splash of water if needed.
