Let’s make it
Heat the oven to 220°C / 425°F. Toss the sweet potato with oil, paprika, and salt on a baking tray.
Roast for 20–25 minutes, turning halfway, until tender and golden.
Warm the wraps according to their packet instructions. Spread each with half the hummus.
Add spinach, cucumber, carrot, sweet potato, and lemon juice. Fold the sides inward and roll tightly. Cut in half and serve.

Refrigerate assembled wraps within 2 hours and eat within 2 days. Store roasted potato separately for up to 3 days; reheat the potato to 74°C / 165°F before assembling a warm wrap.
