Build a Better Pot of Soup

Good soup does not need a long ingredient list. Layer a little flavor, choose a clear texture, and finish with care.

Give the vegetables a head start

Soften onion or other sturdy vegetables in a little oil before adding liquid. Medium heat gives them time to soften without burning. Add minced garlic and ground spices briefly near the end of this stage so they become fragrant rather than bitter.

Choose the body of the soup

Red lentils soften and thicken a pot quickly. White beans give body when partially blended. Potatoes add a different kind of creaminess. These ingredients do not cook at the same rate, so use a recipe suited to the ingredient rather than exchanging them without changing the method.

Keep the simmer gentle

After bringing the pot to a boil, lower the heat so it bubbles gently. Stir thick soups often, especially near the bottom. Add water if needed and wait until the end before adjusting salt when your broth is already seasoned.

Finish, then store safely

A little lemon juice, vinegar, or chopped herbs can lift a finished soup. When saving leftovers, divide soup into shallow containers and refrigerate within two hours, or one hour above 32°C / 90°F. Keep refrigerated leftovers for three to four days at most. When reheating, bring soup to a rolling boil and reach 74°C / 165°F.
